Fall is here…and along with it are chilly mornings that remind us all that Summer is gone and it’s time to put on a scarf. This morning, I was up at 6:45am, waiting for groceries to be delivered. At first, I planned on going back to bed, but decided that the day was too good to be wasted. Instead, I whipped up some pancakes from scratch and instantly felt a little warmer. Wearing my new flannel pants and fuzzy slippers helped a little as well. That and some slow and romantic Dean Martin on Pandora. All of the above contributed to a great feeling of warmth and romance (too bad my husband had to be at work…he would benefit from the romance:)

So how did I make those yummy pancakes? Well, I went to my kitchen BFF, www.allrecipes.com and found “Good Old Fashioned Pancakes” recipe that I followed.
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
The recipe yielded eight good-sized pancakes. Tip: if you have a griddle, use it because the cakes will be fluffiest.
The taste was great with some butter and syrup.

Now, you might be wondering at this point whether or not I ate all eight pancakes by myself…well no. I enjoyed two, and the rest I plan on freezing so that I can have homemade breakfast each morning before work. I read this tip in a Martha Stewart magazine and think it’s a great idea. I hate being hungry in the morning and buying breakfast adds up, so I am going to try this.
Pancakes Freezing
FREEZING instructions:
1. Let pancakes cool completely on cookie sheet in one layer.
2. Place cookie sheet in freezer and let pancakes freeze
3. Place frozen pancakes in a resealable freezer bag
4. Take out as many as you want in the morning and toast/microwave
5. ENJOY 🙂 This will make every morning feel like Saturday morning!
